Here in the South we start back to school at the beginning of August. Why? I guess because its too dang hot to be outside, so you might as well send the kids on back to school. But, back to school means back to early mornings and packing lunches and not just for the kiddos but for the adults, too.
When it comes to packing the adult (or very open-minded teen) lunch box, a sandwich is hard to beat, but that doesn’t mean you have to just eat bologna and cheese. Here are 10 different sandwiches you can whip up for your own lunchbox.
Bonus: lots of them can be made way ahead of time.
Italian Pressed Sandwich
Check out this recipeYou’re going to see a lot of pressed sandwiches in this roundup because they are so delicious and so wonderfully easy to keep in your fridge for days. Impress all of your co-workers with this artisan looking sammy!
Easy Chicken Salad with Grapes
Check out this recipeChicken Salad is a classic and for good reason. It’s budget friendly, holds well in the fridge, and simply refreshing on hot days. Good on bread, crackers, or as a salad.
Baked Italian Sandwich
Check out this recipeI love this sandwich, which is sort of like a pie. Hot or cold or even room temperature, this delicious baked sandwich is perfect lunchbox fare. The addition of eggs keeps your fillings from falling out, which is a good thing. You don’t need a stain on your shirt at the office, do you?
The Guacamento
Check out this recipeAh…The Guacamento. It’s the craziest combo you never thought of, but it totally works. Bacon-y pimento cheese meets creamy guacamole in a mouthful of mind-melting deliciousness. Don’t knock it until you try it.
Italian Party Panini
Check out this recipeAnother version of the totally delicious pressed sandwiches. This one is pressed in a skillet, but can totally be pressed in the fridge as well. The marinated veggies take this sandwich to the next level.
Chipotle Roast Beef Wrap
Check out this recipeI guess, technically, a wrap is not a sandwich, but its pretty similar and certainly fits comfortably in a lunchbox. This chipotle roast beef wrap was my best-seller back in my catering days. I still have people asking me for it!
Spicy Turkey Wrap
Check out this recipeI know, another wrap, but this one is special and SPICY! Whipped up with fresh sliced turkey, bacon, avocado and a divine spicy mayo, this wrap will be top of your list. And it’s in a spinach wrap…so that probably makes it healthier. 😛
Grilled Veggie Sandwich
Check out this recipeThe last of the pressed sandwiches, but this one is even more virtuous because it’s vegan-friendly. Grilled veggies and a smathering of hummus and you’ve got a sandwich so delicious that no-one will miss the meat or the cheese.
Lemon Dill Shrimp Salad
Check out this recipeLemon Dill Shrimp Salad feels like something special when you eat it. It’s seafood, but it’s not tuna so your whole office will not be over-powered by the smell of cat food. This shrimp salad is light and delicate. Perfect for days when you want to eat something a little bit fancy.
Chicken Club Chicken Salad
Check out this recipeChicken Club Chicken Salad is all of your favorite sandwich fillings whipped up in one easy to eat bowl. Schmear this delectable concoction on any type of bread, wrap, or roll. If you are living a keto lifestyle, pile this on top of pork rinds or roll it up in some green leafy lettuce leaves.
Best Lunch Container
So now you have the perfect sandwich to pack in your lunchbox, but what about the best container to put it in? I’m a fan of the semi-disposable bento boxes that comes in a 20 pack on Amazon. They are dishwasher safe, but if you lose one it’s not the end of the world. If you are looking for something a little more long-lasting, then I recommend the OXO Lunch container. It holds your sandwich and has a little compartment for your favorite side item.
Now, go forth and make yourself a delicious lunch!
