Finally! Spring is here! It’s time to plant flowers, clean the house, and fire up the grill. It’s also time to try to fit back in those shorts from last summer. So that means more veggies! When it comes to veggies I like simple. Fresh produce has a lot of flavor and I don’t like to compete with that too much. A simple sprinkle of olive oil, salt and pepper is all most veggies need.
I grilled squash here but any vegetable will do, even potatoes ( just par-boil them first!).
Salt ( or some fancy Shallot Salt if you have it! )
Pepper
Olive Oil
Summer Squash ( or zucchini, mushrooms, tomatoes- use a firm tomato and slice 1/2″ thick, etc.)
Slice your squash about 1/4″ thick. Brush each side with oil and sprinkle with salt and pepper. Heat a grill over medium low heat ( or coals). Brush grill grates with oil to prevent sticking. Place squash on grill. Cook for a few minutes until squash starts to turn golden brown, then flip and finish cooking on other side. Serve and Enjoy!!!
