Wow. What a crazy month this has been! I finally got back into town on Sunday after almost an entire month away from home. I have driven about 2000 miles in the last 28 days which is a feat that I never thought could be accomplished with two 3 year olds in the back seat. Thanks to the DVD player and copious amounts of ring pops, juice boxes, and crayons, we made it there and back ( and there and back again) safe, sound and still relatively sane.

Before I get to the winner of the Pasta Giveaway, I want to share this recipe that I whipped out this evening for dinner. It’s a simple dish that is light and summery. Perfect for this weather! You could grill this dish instead of roasting it if you think ahead and not wait until 5PM to decide what is for dinner ( like me). Both of my kids enjoyed the chicken and asked for seconds. Therefore, it must be good!
Roasted Garlic Lemon Pepper Chicken
4 leg quarters with skin on
1 lemon
1 large or 2 small cloves of garlic, peeled
salt and pepper
olive oil
Preheat the oven to 400. Lay out chicken skin side up on a baking sheet. Drizzle each quarter with a little oil, then season liberally with salt and pepper.
Thinly slice the lemon and the garlic.
Gently lift the skin of each quarter and place 2 slices of lemon and 1/4th of the garlic under the skin. sprinkle with additional salt and pepper.
Cook chicken until juices run clear and temperature reaches 175
or until the handle of your oven door falls off.
Serve on top of rice and sautéed vegetables and squeeze a little lemon juice on top to finish.
