What is Halloween without a little chocolate? These might be the best cookies ever. I think it should really be named the Cookie that thought it was a Brownie. That’s much more acurate.
1/3 cup AP flour
1/4 cup unsweetened cocoa
1 tsp. baking powder
1/4 tsp. salt
6 oz. semi-sweet chocolate, chopped
1/2 cup butter
2 large eggs
3/4 cup sugar
1 1/2 tsp. vanilla
2 cups chopped pecans ( optional and not in mine)
1- 6oz package semi-sweet chocolate chips
Preheat oven to 325. Grease 2 large cookie sheets. In a small bowl combine flour, cocoa, salt and baking powder.
Melt chocolate and butter in a small saucepan over low heat. Stir frequently, until smooth. Remove from heat and cool.
In large bowl with a mixer at medium speed, beat eggs and sugar until light colored. Reduce speed and slowly add chocolate, flour and vanilla until well blended. Increase speed to high and beat for 2 minutes. Stir in pecans and chocolate chips.
Drop batter onto cookie sheets about 2 inches apart. Slightly spread each cookie out slightly with a greased spatula.Bake until tops are shiny and cracked, about 15 minutes. Make sure you don’t overcook these! Makes about 48 cookies.
