Now that the kids are older, they spend a lot more time at other people’s houses (Hooray for sleepovers!). But we still have to eat! So, that means a couple things for us: 1 – our dinner options are limitless! No picky eaters to hamper our taste buds, and 2 – whatever we make has to be for just 2 people. We also want dinner to come together fast so we have more time to enjoy the alone time together.

We have put together a list of 11 Quick & Easy Dinners for Two to make the most out of our nights in for just the two of us. We can’t wait for the next sleepover night!

Stuffed Portobello Mushrooms with Bacon and Cheddar – Blaine and I are huge mushroom fans. We are also bacon and cheddar fans. So, these stuffed mushrooms would make an excellent dinner with a salad and a cold beer.



Spicy Shrimp Poke Bowl – Y’all, I love sushi and this poke bowl is sushi deconstructed. I can’t wait to give this one a try! 



Taco Pizza – Ok, just because the kids are gone does not mean that we can’t gorge on pizza or tacos…or both! I love this recipe. It’s the best of both worlds!

Filet Mignon with Garlic Herb Butter – Nothing says “date night” like filet mignon. Bonus is that it also cooks up in a snap. 



Pan Fried Haddock Mediterranean Style – Nothing cooks faster than fish. This quick dinner has all of the grown up flavors that we love. 


Panzanella Salad – The ultimate “I don’t want to cook” dinner. Light and refreshing!
