Ingredients
for filling:
1.5lbground chuck
1chopped onion
4chopped carrots
1largechopped bell pepper
salt
pepper
1Tdried Italian seasoning
1t.garlic powder
16oz canned tomato sauce
1cupfrozen peas
for biscuits
2cupsself-rising flour
1/4cupcold butter or lard
about a cup of buttermilkcould be more or less
1/2cupcheddar
1t.garlic powder
Instructions
Preheat oven to 400. In a skillet, add beef, carrots, onion, bell pepper to pan and cook until beef is brown and veggies are soft. Drain.
Meanwhile, In a large bowl,use a box grater to grate the butter into the flour. Mix with your hands until well incorporated. Stir in cheese and garlic powder. Then add buttermilk until a dough comes together. Turn out on to a floured surface and lightly knead, then pat out and cut into biscuits with a biscuit cutter.
In another bowl, combine remaining filling ingredients then pour into a casserole dish. Starting in the middle, place biscuits on top making sure they touch each other until you have covered most of the top of the casserole.
Bake for 20 minutes or until tops of biscuits are lightly browned. Serve with a salad and enjoy!
