Ingredients
3cupschopped romaine lettuce
1cuparugula
2tomatoescut into wedges
1/2red onionsliced
1/4cupmarinated artichoke heartschopped
1/4cupkalamata olives
4hard boiled eggsquartered
4oz. salamichopped
1cupshredded mozzarella
8pepperoncini
1rib celerychopped
Dressing:
1/4cupmayo
1/4cupred wine vinegar
1/3cupolive oil
1garlic cloveput through a press
1teaspoondried oregano
1/2teaspoonkosher salt
1/2teaspoonpepper
Instructions
In 4 separate serving bowls divide the lettuce and top with the arugula. divide the remaining salad ingredients among the four bowls.
In a pint jar, add the dressing ingredients. Screw on a lid and shake vigorously until the dressing is combined. Pour the dressing over teach salad and toss to coat. Serve immediately.
