Ingredients
2poundssmall Yukon Gold potatoesquartered
½cupfresh or frozen peas
¼cupdiced red onion
1medium tomatoseeded and diced
1Tfresh dill
1t. lemon juice
1t. grated horseradish
4slicesbaconcooked and chopped
¼-1/2cuplight mayo
1t. salt
½t. pepper
Instructions
In a large pot, cover potatoes with cold water and bring to a boil. Boil until potatoes are tender adding peas during the last few minutes to cook through. Drain and transfer to a large bowl. Add remaining ingredients and fold together until combined. Refrigerate until ready to serve.
Tip: Start with a ¼ cup of mayo and add more if needed. Some people like more mayo than others.
