Southwest Salad with Spicy Cilantro Dressing

Ingredients
Salad:

cups
chopped Romaine lettuce

red bell pepper
thinly sliced

kernel corn
1/4

black beans
1/4
cup
chopped green onions
1/4
cup
shredded cheddar cheese

. sliced grilled chicken breast
I used a Southwest seasoning on mine
Dressing:
1 - 6
oz
. container 0% plain Greek yogurt

cup
minced cilantro

mayo

fat free half and half
1/2

dry dill

cayenne

cumin

lemon juice

Instructions
In a large bowl combine the salad ingredients and top with the grilled chicken.
Whisk all of the dressing ingredients together in a separate bowl.
Top the salad with 1/4 of the dressing. Serve and enjoy!
Notes
This recipe makes one salad, but enough dressing for 4 salads. So meal prep for the whole week!
