Ingredients
1cupfresh or frozen blackberries
3/4cupsugaror Monkfruit sweetener
1cupwater
8mint leaves
4limes
Club soda
Ice
Instructions
In a small saucepan, combine the blackberries, sugar and water together. Bring to a boil them simmer for 10 minutes. Remove from heat and let the mixture cool to room temperature.
Pour the blackberry syrup through a fine mesh strainer and into a glass container. (At this point you can store this simple syrup in the fridge for a couple of days)
To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker. Add in the juice of ½ a lime and a mint leaf. Muddle (that means mush) the mixture together with a muddler or the handle of a wooden spoon. Add in a handful of ice to the shaker and give the mix a shake or two (if you would like to add an ounce of rum, vodka or gin, add it to the glass before shaking).
Fill a high ball glass with ice and pour the contents of the shaker in. Top with club soda and enjoy!
