for filling:

  • 1.5 lb ground chuck
  • 1 chopped onion
  • 4 chopped carrots
  • 1 large chopped bell pepper
  • salt
  • pepper
  • 1 T dried Italian seasoning
  • 1 t. garlic powder
  • 16 oz canned tomato sauce
  • 1 cup frozen peas

for biscuits

  • 2 cups self-rising flour
  • 1/4 cup cold butter or lard
  • about a cup of buttermilk could be more or less
  • 1/2 cup cheddar
  • 1 t. garlic powder


  • Preheat oven to 400. In a skillet, add beef, carrots, onion, bell pepper to pan and cook until beef is brown and veggies are soft. Drain.
  • Meanwhile, In a large bowl,use a box grater to grate the butter into the flour. Mix with your hands until well incorporated. Stir in cheese and garlic powder. Then add buttermilk until a dough comes together. Turn out on to a floured surface and lightly knead, then pat out and cut into biscuits with a biscuit cutter.
  • In another bowl, combine remaining filling ingredients then pour into a casserole dish. Starting in the middle, place biscuits on top making sure they touch each other until you have covered most of the top of the casserole.
  • Bake for 20 minutes or until tops of biscuits are lightly browned. Serve with a salad and enjoy!
