Greek Chicken Salad Flatbread

Quick and Healthy chicken salad packed full of all of your favorite Greek flavors!
Servings: 4 servings

Ingredients

  • ¾ cup plain Greek yogurt
  • Juice of 1 lemon
  • 3 cloves garlic minced
  • 2 Tablespoons fresh dill or 2 t. dried
  • 2 Tablespoons fresh minced parsley
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 cup chopped tomatoes
  • 1 medium cucumber peeled, seeded and chopped
  • ¼ cup chopped Kalamata olives or green olives if you can’t find Kalamata
  • ½ red onion diced
  • 4 cups chopped cooked chicken
  • ¼ cup crumbled feta cheese
  • Romaine lettuce
  • Sliced tomatoes
  • 4 Flatbreads

Instructions

  • In a large bowl, mix together all of the ingredients through the feta cheese. Adjust the seasoning to taste. Refrigerate for 30 minutes before serving. Serve on warm flatbreads with lettuce, tomatoes and extra feta cheese.
