In a small saucepan, bring the water, sugar and mint to a boil and cook until the sugar has dissolved. Remove from heat and let cool. Meanwhile, puree the strawberries, 2 T lime juice, and peaches in a food processor until smooth. Strain the puree through a fine mesh strainer to remove the seeds and pulp. This should leave about 1 cup of strawberry peach juice. In a large glass pitcher, combine strawberry juice, lime juice, and the simple syrup ( remove the mint sprig) and stir to combine. Fill 4 glasses with ice. Fill each glass ¾ full with strawberry peach mixture and top with a splash of club soda or ginger ale. Garnish with lime slices and fruit. Serve and enjoy!
