Italian Stuffed Zucchini Boats

You can’t go wrong with this simple zucchini recipe stuffed with Italian veggie goodness!

Baked Italian Stuffed Zucchini is a great way to use up all of that summer squash! You can enjoy these stuffed zucchini boats for dinner, lunch, appetizers for parties or take to your next BBQ.

INGREDIENTS

– zucchini – onions – garlic – parsley stems removed – olive oil – leafy greens i.e. spinach, Swiss chard, or kale – Italian seasoning – Parmesan – eggs  – breadcrumbs – salt –pepper

Scrub the zucchini then cook in boiling water,

Step 1.

Remove from water and let cool. Slice in half lengthwise and scoop out the pulp

Step 2.

Set on a baking sheet.
