Roasted Poblano and Corn Chowder

Made with fresh ingredients like roasted poblano peppers, bacon, potatoes and of course, corn, this recipe is one you will want to make time and time again for a warm and wonderful dinner option.

Corn chowder is always a welcome sight at meal time, but this recipe really takes it to a new level. Roasted poblano peppers are the perfect partners for the bacon and garlic in this dish.

HOW TO MAKE: Preheat the broiler. Rub the poblano pepper with the vegetable oil. Place on a baking sheet and put it in the oven as close as you can to the broiler

Remove the pepper from the oven and place into a bowl and cover with plastic wrap. Once the pepper is cool enough to handle, peel the skin off and remove the stem and seeds.
