Little Peach Picnic Cakes

Baking these adorable Little Peach Picnic Cakes in muffin tins is the way for me to reign in my cake consumption. You really can’t call them cupcakes, they are smaller than that. Just tiny little portions of slightly sweet, fluffy cake with a fruity middle that is the perfect end to a picnic or outdoor dinner.

– all purpose flour – baking powder –  nutmeg – kosher salt –  softened butter – sugar – egg –  lemon zest – vanilla extract –  milk – peaches , fresh or frozen

Preheat the oven to 350 degrees. Coat a muffin pan with cooking spray.

Step 1.

In a medium bowl, mix together the flour, baking powder, nutmeg and salt. Set aside.

Step 2.

In a stand mixer or in a large bowl with a hand mixer, cream the butter and sugar together.

Step 3.
