Italian Braised Short Ribs

This recipe will work with any tough cut of beef, such as chuck roast. And if you have any dry red wine lying around, substitute it for half of the beef broth for an even richer flavor.

Preheat the oven

In a large Dutch oven over medium high heat, heat the olive oil until almost smoking. Sprinkle both sides of the beef ribs with the salt and pepper and brown them in the hot oil on both sides.
